WHAT I EAT IN A DAY PART 10 (VEGAN)

BREAKFAST

SUPERFOOD SMOOTHIE:

Ingredients

1 tbsp chia seeds
16 (roughly) Sacha Inchi nuts
1 tbsp sunflower butter
1 tsp cinnamon powder
1-2 dates, pitted
1 ripe banana
1 cup oat milk
handful fresh spinach
4 ice cubes (if not using frozen bananas)
1/2 cup water
hemp seeds

SNACK

ROASTED RED PEPPER HUMMUS

Ingredients
2 cups cooked chickpeas
1/4 cup tahini
1/2 cup roasted red peppers
3 garlic cloves
1 lemon, juiced
1/2 tsp cumin powder
1/2 tsp paprika powder
1/2 tsp pink Himalayan salt
1/4 tsp black pepper
2 tbsp olive oil
pine nuts for garnish
cilantro for garnish

Recipe
Add all of the ingredients into a blender/food processor
If using a food processor, slowly pour in olive oil while running the processor
If using a nutribullet/ blender, add oil in after a few seconds, return and keep blending
garnish with pine nuts, cilantro, olive oil
serve with carrots, seeded crackers

LUNCH

LOADED HAM SANDWHICH

Ingredients
4 slices Simple Truth – Plant Based Ham Style Deli Slices – Black Forest
Tomato
Avocado
White onion
veganaise
roasted red pepper hummus (from snack)
lettuce
radish sprouts (any sprout you like!)

DINNER

MUSHROOM ALFREDO PASTA

Ingredients
Simple Truth Plant Based Alfredo Sauce
Simple Truth Organic Gluten Free Red Lentil & Quinoa Fusilli Pasta
8 oz crimini mushrooms, chopped
1-2 tbsp liquid aminos
1 handful fresh spinach
capers for garnish

Recipe
Sauté mushrooms in liquid aminos, lightly!
steam spinach
cook pasta
warm Alfredo sauce
add everything together and serve with capers!
