HOW TO MAKE HEALTHY LUNCH RECIPES AT HOME // TASTY VEGAN & PALEO Friendly Options | Sanne Vloet

Hi Guys,

Guess where I’m waking up today? I’m sure many of you can guess as I’ve been talking about it for a while now. So since we all started this year with our health and wellness in mind, I wanted to share three very easy to make recipes with you, with vegan options with plant based protein, and one option a little feta cheese. I wanted to also test out paleo recipes and the carrot salad is paleo friendly. I was also inspired by a wrap recipe from Purple Carrot, anyone interested in a vegan meal service?

So i’m excited to get into a routine! Max and I have been living out of one suitcase each which has been a challenge. I’ve been traveling to different places with different climates so I had to carefully plan everything I packed. I get cold easily so I probably over packed on the jackets, but it feels good to know that I won’t be moving again for at least a few years!

I’m so happy that so many of you have been joining the community! I am so excited to be in a new place, I can’t wait to meet new people, and to be honest this year feels special. I’m not the only that feels the energy in the air, I know you do too. Let’s all try to have a positive outlook together. On instagram we did a little weeklong challenge, but I challenge you today to share one thing you are grateful for and then respond to people who leave comments. I feel like we don’t interact together enough so I want to see more of us connecting! Are you with me?

I’m glad you guys are here with me, I’m so happy so many of you read my little letters to you because they take a lot of time. One thing that is really scary to me is that I’ve started thinking in english. Has that ever happened to you?

Ingredients
Roasted Carrot Brown Rice Salad:
– 1 cup raisins
– 5 big carrots
– Handful fresh parsley and cilantro
– 1 cup brown rice
Spice Mix
– 2 table spoons cumin seeds, 2 teaspoon coriander, 1 teaspoon paprika, 1 teaspoon paprika, ½ teaspoon turmeric, 1 teaspoon salt, ½ teaspoon pepper
– olive oil
– 1/4 cup Feta cheese

Salad dressing
-1/3 cup olive oil, 1 table spoon white wine vinegar, 1 tablespoon of Dijon mustard, 1 minced garlic glove, half lemon, 1 tsp honey, pinch of salt.

Veggie Sandwich
– Green Zucchini
– Yellow Zucchini
– Eggplant
-Red bell Pepper
– Sourdough Bread

FOR THE BASIL AIOLI
· 1 cup fresh basil
· 1/4 cup vegan mayo
· 1/4 cup olive oil
· 2 cloves garlic
· 1 tbsp lemon juice
· salt to taste

Collard Green wrap
– 4 Collard Green leafs
– 1 Block of Tempeh
– 2 Tablespoons Abricot Jam
-Olive oil and pepper and salt
– 1 scoop of Veganaise
– 1 cup of fresh cilantro
– Pickled Jalapeno
– Shredded Carrot, Cucumber, 1 cup roasted Corn, Red Bell Pepper
Peanut sauce: ½ cup of peanut butter, 2 tablespoon of soy sauce,1 tsp red pepper flakes, half a lime, ¼ cup water
